Artificial crab, often labeled as “imitation crab” or “krab,” is a processed seafood product designed to mimic the flavor, color, and texture of real crab meat. This widely available food is not derived from crab but is instead made from surimi, a paste of finely pulverized fish. The product is a cost-effective alternative to genuine crab, which is why it is frequently used in commercial food preparation.

Surimi, which translates to “ground meat” in Japanese, is the foundational ingredient for artificial crab and other imitation seafood products. This paste is created from deboned, minced, and thoroughly washed white fish, most commonly Alaskan Pollock, due to its mild flavor and abundance. The washing process removes fat, enzymes, and undesirable odors, resulting in a neutral, protein-rich base.

The technique of making surimi originated in Japan as a method for preserving excess fish catch. The modern industrial process advanced in the 1960s when adding cryoprotectants like sucrose or sorbitol stabilized the fish protein, allowing the paste to be frozen and shipped globally. Egg whites or soy protein function as binders to improve the texture, glossiness, and color of the final product. Natural or artificial flavorings are incorporated to mimic the taste of crab, and some manufacturers add a small amount of real crab extract. The paste is then cooked and pressed into molds to form characteristic flakes, sticks, or chunks that resemble crab legs. Finally, colorants like paprika extract or carmine are applied to the exterior to give the product the reddish-orange hue of cooked crab.

The nutritional composition of artificial crab differs noticeably from that of real crab meat due to the added ingredients. While both products have a similar calorie count, imitation crab derives a majority of its calories from carbohydrates due to the added starches and sugars. Real crab, by contrast, is significantly higher in protein and contains virtually no carbohydrates. Imitation crab is generally a low-fat option, but it is also lower in beneficial nutrients like Vitamin B12, zinc, and Omega-3 fatty acids, which are often lost during the extensive washing and processing of the fish.

Consumers must be aware of the common allergens present in the product, which extend beyond the fish base.
